Babi guling or better known as be guling is made from the basic ingredients of piglets whose stomachs are filled with base genep (double seasoning) consisting of: shallots, garlic, kencur, ginger, isen, turmeric, cayenne pepper, palm sugar, salt , shrimp paste, bay leaf and a little sour.
At first, the pig that has been slaughtered is doused with hot water to remove the skin to make it clean. After that, his stomach was immediately dissected as wide as 10 cm to remove the contents. After all the contents of the stomach come out, the pig is washed thoroughly and then pierced with a wooden skewer that has been prepared while adding the crushed spices. The seasoning is then inserted into the pork belly and then sewn with a thread (rope) so that the seasoning does not spill. After that, the pork is rolled (roasted) over a roasting fire by turning the wooden skewer, so that the pork cooks evenly.
In this process the flame is controlled by fanning so that the pork does not burn quickly. In addition, after the pork is slightly dry, then bathed in coconut water so that it does not burn quickly, and when it is slightly cooked, it is smeared with coconut oil. When the color of the pork turns reddish yellow evenly and the twisting of the skewer becomes loose, it means that the pork roll is cooked. So that it can be lifted to be placed in a large basin/nare, by not forgetting to pull the stick. Thus this process has been completed so that it can be served or consumed.
